In their traditional
shoulder-bag
(the Istacca) shepherds will carry bread, cheese and dried sausage
to eat in the sheep-fold. And when the countryside offers up its fruits,
he accepts: almonds in particular, which he then gives to his womenfolk
on his return home.
For it is these almonds with their delicately poised bitter-sweetness which
compose the secret of Bitti's macaroons.
Prepared by the patient hands and slid into the oven under the watchful
eyes of the woman of the house, the macaroons are only lightly browned so
that the mixture inside remains mouth-meltingly soft. |
