Almonds, sugar, eggs, flour, cinnamon

Another exemplar of Quartu Sant'Elena's rich tradition of cake making.
Its name (dead men's bones!) refers to All Saints' and All Souls' days; in fact, these are typically November cakes.
Before kneading the ground almonds are mixed in with the whole toasted almonds.
Because of this and the fact that the dough is worked by hand, these cakes have an irregular and slightly jagged appearance.
The mixture is firm and although the flavour is intense, it is cleverly softened
by a pinch of cinnamon.
