Nieddos - that is to say "black"! Benetutti's Papassinos  are so called in order to distinguish them from those made elsewhere of "pale" short-pastry.
While the children are constructing tiny musical instruments from the walnut shells, their mothers are busy grinding the walnuts
and mixing them with the almond-flour.
These little cakes, which are compact yet meltingly soft in texture, were traditionally made in the early autumn.
They can, however, be enjoyed with a cup of choice tea throughout the year
